  • Ginger-Garlic Paste (अदरक-लहसुन का पेस्ट) – 1 tablespoon
  • Cumin Seeds (जीरा) – 1 teaspoon
  • Bay Leaf (तेज पत्ता) – 1
  • Cloves (लौंग) – 3-4
  • Cinnamon Stick (दालचीनी) – 1 inch
  • Green Cardamom (हरी इलायची) – 2-3
  • Turmeric Powder (हल्दी पाउडर) – 1/2 teaspoon
  • Red Chili Powder (लाल मिर्च पाउडर) – 1/2 teaspoon
  • Garam Masala (गरम मसाला) – 1 teaspoon
  • Coriander Powder (धनिया पाउडर) – 1 teaspoon
  • Salt (नमक) – to taste
  • Ghee or Oil (घी या तेल) – 3 tablespoons
  • Fresh Coriander Leaves (ताजा धनिया पत्ते) – for garnish

The Step-wise Process of Cooking Veg Tehri

  1. Preparation:
    • Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20-30 minutes. Drain and set aside.
    • Wash and chop the mixed vegetables into bite-sized pieces.
  2. Cooking the Tehri:
    • Heat ghee or oil in a large pot or pressure cooker over medium heat.

    • Add 2 cups of water and bring to a boil. Check the seasoning and adjust salt if needed.
    • Cover the pot with a lid and reduce the heat to low. Cook for 15-20 minutes, or until the rice and vegetables are cooked and the water is absorbed. If using a pressure cooker, cook for 2 whistles on medium heat.
    • Once cooked, let it rest for 5 minutes before opening the lid. Fluff the rice gently with a fork.

    • Garnish with freshly chopped coriander leaves.
