  • 2 Tbsp Black Pepper (काली मिर्च)
  • 1/2 Tbsp Mace (जावित्री)
  • 1/2 pc Nutmeg (जायफल)
  • 15 small pcs Bay Leaf (तेज पत्ता)
  • 1 Tbsp Kasuri Methi (कसूरी मेथी)
  • 3 Whole Red Chillies (पूरी लाल मिर्च)
  • 1 Tbsp Stone Flower (पत्थर का फूल)
  • 1/2 Tbsp Turmeric Powder (हल्दी पाउडर)

Procedure for Making Biryani Masala

  1. Dry roast all the whole spices (cardamom, cinnamon, cloves, bay leaves, star anise, black peppercorns, coriander seeds, cumin seeds, fennel seeds, nutmeg, and mace) in a pan over low heat until fragrant. Be careful not to burn them.
  2. Allow the roasted spices to cool completely.
