  • 1 cup fresh coriander leaves (1 कप ताजा धनिया पत्तियाँ)
  • 1/2 cup fresh mint leaves (1/2 कप ताजा पुदीना पत्तियाँ)
  • 1/2 cup spinach leaves (1/2 कप पालक पत्तियाँ)
  • 2 green chilies (2 हरी मिर्च)
  • 4 cloves of garlic (4 लहसुन के लौंग)
  • 1-inch piece of ginger (1 इंच का अदरक)
  • 1 tablespoon roasted gram flour (1 बड़ा चमच भुना हुआ बेसन)
  • 1 tablespoon lemon juice (1 बड़ा चमच नींबू रस)
  • Salt to taste (नमक स्वाद अनुसार)
  • Water as needed (जरुरत अनुसार पानी)

Instructions:

  1. In a blender, combine fresh coriander leaves, mint leaves, spinach leaves, green chilies, garlic cloves, and ginger. Blend into a smooth paste, adding water as needed to facilitate blending.
  2. Once the mixture is smooth, transfer it to a bowl or container.
  3. Heat a pan over low heat and add roasted gram flour (besan). Dry roast the gram flour for 2-3 minutes until it turns golden brown and aromatic.
  4. Add the roasted gram flour to the green herb paste and mix well to combine.
  5. Stir in lemon juice and salt to taste. Adjust seasoning according to preference.
  6. Indian Green Gravy is now ready to be used as a marinade, sauce, or dip for various dishes.
