- 1 cup fresh coriander leaves (1 कप ताजा धनिया पत्तियाँ)
- 1/2 cup fresh mint leaves (1/2 कप ताजा पुदीना पत्तियाँ)
- 1/2 cup spinach leaves (1/2 कप पालक पत्तियाँ)
- 2 green chilies (2 हरी मिर्च)
- 4 cloves of garlic (4 लहसुन के लौंग)
- 1-inch piece of ginger (1 इंच का अदरक)
- 1 tablespoon roasted gram flour (1 बड़ा चमच भुना हुआ बेसन)
- 1 tablespoon lemon juice (1 बड़ा चमच नींबू रस)
- Salt to taste (नमक स्वाद अनुसार)
- Water as needed (जरुरत अनुसार पानी)
Instructions:
- In a blender, combine fresh coriander leaves, mint leaves, spinach leaves, green chilies, garlic cloves, and ginger. Blend into a smooth paste, adding water as needed to facilitate blending.
- Once the mixture is smooth, transfer it to a bowl or container.
- Heat a pan over low heat and add roasted gram flour (besan). Dry roast the gram flour for 2-3 minutes until it turns golden brown and aromatic.
- Add the roasted gram flour to the green herb paste and mix well to combine.
- Stir in lemon juice and salt to taste. Adjust seasoning according to preference.
- Indian Green Gravy is now ready to be used as a marinade, sauce, or dip for various dishes.
