Ingredients Required:

Palak Paneer Ingredients
  • 250g Paneer (Indian cottage cheese), cubed
  • 500g spinach (palak), washed and trimmed
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 2 green chilies, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1/4 cup water (optional, for blending)
  • 2 tablespoons cream (for garnishing)

Step-wise Process:

  1. Blanch the spinach in boiling water for 2-3 minutes until it wilts. Immediately transfer it to a bowl of ice water to retain its vibrant green color. Drain and puree the spinach in a blender. Add a little water if needed to get a smooth paste.
  2. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them sizzle.
  3. Add the finely chopped onions and sauté until they turn translucent. Add the ginger-garlic paste and green chilies, and cook until the raw smell disappears.
  4. Stir in the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the masala.
  5. Add the spinach puree to the pan and mix well. If the mixture is too thick, add a little water to reach your desired consistency. Cook for 5-7 minutes on a medium flame.
  6. Add the paneer cubes and gently mix, ensuring the paneer is coated with the spinach. Cook for another 5 minutes. If desired, add a splash of cream to make the curry richer.
  7. Sprinkle garam masala over the curry and mix gently. Turn off the heat.
