  • 2 tsp Red Chili Powder (लाल मिर्च पाउडर)
  • 2 tsp Turmeric Powder (हल्दी पाउडर)
  • 2 tbspGinger Powder (अदरक पाउडर)
  • 1 tsp Garlic Powder (लहसुन पाउडर)
  • 4-5 Cinnamon Stick (6g) (दालचीनी)
  • 30 Cloves (लौंग)
  • 7-8 Black Cardamom Pods (काली इलायची)
  • 2 Nutmeg (7-8g) (जायफल)
  • 6-7 Blades Mace (4-5g) (जावित्री)
  • 1 tpsp Kasuri Methi (कसूरी मेथी)

Procedure for Making Tandoori Masala

  1. Dry roast all the whole spices (coriander seeds, cumin seeds, black peppercorns, cinnamon stick, cloves, black cardamom pods) in a pan over low heat until fragrant. Be careful not to burn them.
  2. Allow the roasted spices to cool completely.
  3. Grind the roasted spices along with the remaining powdered spices (red chili powder, turmeric powder, ginger powder, garlic powder, nutmeg, kasuri methi) into a fine powder using a spice grinder or mortar and pestle.
  4. Store the freshly ground Tandoori Masala in an airtight container in a cool, dry place for optimal freshness and flavor.
