  • 8 large onions, finely chopped (2 बड़े प्याज, बारीक कटा हुआ)
  • 3 ripe tomatoes, pureed (3 पके टमाटर, प्यूरी किया हुआ)
  • 100 grams cashews (100 ग्राम काजू)
  • 3 cloves of garlic, minced (3 लहसुन के लौंग, कद्दूकस किया हुआ)
  • 1-inch piece of ginger, grated (1 इंच का अदरक, कद्दूकस किया हुआ)
  • 2 green chilies, slit lengthwise (2 हरी मिर्च, लंबाई में काटी हुई)
  • 2 tablespoons vegetable oil (2 बड़े चमचे वेजिटेबल तेल)
  • 1 teaspoon cumin seeds (1 छोटी चमच काला जीरा)
  • 1 teaspoon turmeric powder (1 छोटी चमच हल्दी)
  • 1 teaspoon coriander powder (1 छोटी चमच धनिया पाउडर)
  • 1/2 teaspoon red chili powder (1/2 छोटी चमच लाल मिर्च पाउडर)
  • Salt to taste (नमक स्वाद अनुसार)
  • Fresh coriander leaves for garnish (ताजा धनिया पत्तियाँ सजाने के लिए)

Instructions:

  1. Heat vegetable oil in a pan, add cumin seeds and wait until they splutter.
  2. Add chopped onions and sauté them slowly until they turn golden brown.
  3. Soak cashews in warm water for 15 minutes and grind them in to a fine paste.
  4. Stir in minced garlic, grated ginger, and slit green chilies. Sauté for another 2-3 minutes until the raw smell disappears.
  5. Add tomato puree to the pan and mix well. Cook for 5-7 minutes until the tomatoes are soft and the oil starts to separate from the gravy.
  6. Add cashew paste to the mixture and keep stirring.
  7. Add all the powdered spices, and salt. Mix thoroughly to incorporate the spices evenly.
  8. Simmer the gravy for another 30 minutes, allowing the flavors to meld together and the gravy to thicken slightly.
  9. Once the gravy reaches your desired consistency, turn off the heat. Garnish with fresh coriander leaves.
