- 3 cloves of garlic, minced (3 लहसुन के लौंग, कद्दूकस किया हुआ)
- 1-inch piece of ginger, grated (1 इंच का अदरक, कद्दूकस किया हुआ)
- 2 green chilies, slit lengthwise (2 हरी मिर्च, लंबाई में काटी हुई)
- 2 tablespoons vegetable oil (2 बड़े चमचे वेजिटेबल तेल)
- 1 teaspoon cumin seeds (1 छोटी चमच काला जीरा)
- 1 teaspoon turmeric powder (1 छोटी चमच हल्दी)
- 1 teaspoon coriander powder (1 छोटी चमच धनिया पाउडर)
- 1/2 teaspoon red chili powder (1/2 छोटी चमच लाल मिर्च पाउडर)
- Salt to taste (नमक स्वाद अनुसार)
- Fresh coriander leaves for garnish (ताजा धनिया पत्तियाँ सजाने के लिए)
Instructions:
- Heat vegetable oil in a pan, add cumin seeds and wait until they splutter.
- Add chopped onions and sauté them slowly until they turn golden brown.
- Soak cashews in warm water for 15 minutes and grind them in to a fine paste.
- Stir in minced garlic, grated ginger, and slit green chilies. Sauté for another 2-3 minutes until the raw smell disappears.
- Add tomato puree to the pan and mix well. Cook for 5-7 minutes until the tomatoes are soft and the oil starts to separate from the gravy.
- Add cashew paste to the mixture and keep stirring.
- Add all the powdered spices, and salt. Mix thoroughly to incorporate the spices evenly.
- Simmer the gravy for another 30 minutes, allowing the flavors to meld together and the gravy to thicken slightly.
- Once the gravy reaches your desired consistency, turn off the heat. Garnish with fresh coriander leaves.
